Vegan Jelly Filled Doughnuts


My first advice on this recipe is to make sure that you have a lot of time before you dive into this. The actual frying process takes no more than a few minutes but the preparation takes around two hours. Although time consuming, they are pretty simple to make. Vegan? Yes. Healthy? No. Regardless, these are pretty good.

 

Vegan Doughnut


Ingredients


1 1/2 tbs yeast
1 cup warm water
1/3 cup raw sugar (you could get away with just using table sugar)
1 cup almond milk
1/2 tsp vanilla
2 tbs safflower oil (or any light oil)
4 cups flour
1/2 tsp salt
filling (I used raspberry, plum, and mango jelly)

 

Instructions


1. Pour the 1 cup of warm water into a bowl and sprinkle the 1 1/2 tbs yeast on top. Allow this to sit for a few minutes for the yeast to dissolve. 

It’s not going to dissolve into the water completely, just wait until the yeast has melted into a layer on top of the water.

2. Once dissolved add in the 1/3 cup sugar, 1 cup almond milk, 1/2 vanilla and 2 tbs safflower oil. Stir this until the sugar had dissolved.
3. Gradually add in the flour and salt in small increments. The mixture should start to slowly thicken and become a dough. 


4. Cover the bowl with foil and let the dough rise for an hour. 


5. Pour the dough onto a flour covered surface. I started out on a cutting board but switched to the counter top because the dough took up so much space.


6. Kneed the dough and roll it out until it is about a half an inch thick. 

This can get messy, so feel free to have your friend do it for you.

7. Cut the dough into squares. I was able to make 20. Don’t worry too much if these are all not the exact same size. You’ll just have a few different sized doughnuts.
8. Add a tablespoon or two of your filling on top of the doughnut squares. 

I used mango and raspberry jelly and plum preserves.



9. Gather the corners of the dough squares and fold them into each other. Make sure to seal up all the sides to keep the filling locked inside. Pat down the squares ones they are folded up. 
As you can see I had a casualty due to putting too much filling on one of the doughnuts.
  
10. Let the dough rise for half an hour, they should almost double in size.

 

Frying


Ingredients


Frying oil (I used peanut oil)
Raw or powdered sugar

 

Instructions


1. I used a deep fryer to fry my doughnuts but you can also use a large pan if you do not have one. Fill your fryer or pan with enough oil to cover the doughnuts and heat it to 350°. If you’re using a pan you’ll need a thermometer to determine the temperature.
2. Fry your doughnuts for one to two minutes on each side. It's important to flip the doughnuts in order to fully cook them.
3. After removing from the fryer or pan be sure to shake off any excess oil. 
4. Sprinkle your doughnuts with extra sugar. 



I think these are best eaten right out of the fryer while they are still warm. If you do eat them the next day be sure the microwave them. They can get a little dense when they are cold, but once warmed up they still taste great.
